The Silk Road was the world's first great culinary conversation, where the mountain kitchens of the Caspian met the palace courts of Persia, the herb-laden valleys of the Levant crossed paths with the sun-warmed Mediterranean shore, and the bold flavours of the Silk Coast found their way inland.
At Shabestan, we have spent years listening to that conversation. What you find on this table is our interpretation of it, shaped by a deep respect for where these flavours came from and a belief that the best food has always been the kind that tells a story.
A Note from Our Kitchen
Some journeys are measured in miles. This one is measured in flavour. The Silk Road was the place where the world's great food cultures crossed paths, borrowed from one another, and became something greater than they were alone. Every fire, every spice, every slow-cooked pot along that route left its mark on the way we eat today.
At Shabestan, we carry that spirit into everything we do. This menu is our way of walking that road again, one dish at a time, with the same reverence for craft and culture that the original travellers brought to every table they sat at.
